Makes 30-35 cookies, depending on how large you scoop.

1 cup packed brown sugar

¾ cup unsalted butter, room temperature

1 egg, room temperature

1 tsp vanilla

1 (3.4 oz) box instant chocolate pudding mix

2 heaping tablespoons dark cocoa powder

½ teaspoon espresso powder

1 tsp kosher salt

¾ teaspoons baking soda

2 cups AP flour, sifted

½ cup white chocolate chips

½ cup Halloween milk chocolate M&Ms

Halloween wilton eye sprinkles

  1. Preheat oven to 350 degrees.

  2. In stand mixer or with hand mixer, beat butter and brown sugar until combined.

  3. Add egg and vanilla and mix until smooth, scraping sides of bowl if necessary.

  4. Mix in pudding mix, cocoa powder, espresso powder, salt, and baking soda.

  5. Add in sifted flour, one cup at a time, until just combined.

  6. Stir in M&Ms and white chocolate chips. A wooden spoon works great.

  7. Use a cookie scoop or tablespoon to scoop out cookies on a lined cookie sheet (parchment paper or silipat cookie liner). Set 2 inches apart.

  8. Hand place sprinkles on top of scooped cookies.
